Since the purchase of my trusty Safeway waffle iron, few Sundays have passed, when the breakfast menu didn’t read WAFFLES!!! It has become somewhat of a Sunday tradition for us to have these babies as a little guilty pleasure.Me being extremely lazy in the kitchen these days, have mostly opted to buying ready mix waffle mix, but last Sunday I felt a bit more earnest than usual and decided to make experiment in the kitchen.
I have always wanted to bake with almond flour and thought that a simple recipe like waffles would be a great way to try it out and I was pleasantly surprised by the results! I got the recipe form The Dig In.com and adapted it to my tastes. It was extremely easy to make and it tasted like heaven! The almond flour gave the waffles a rich buttery taste! I think that from now , its safe to say no more ready -mix waffles for us!
1¾ cups almond flour
1 tsp baking powder
2 tsp brown sugar
¼ tsp sea salt
¾ cup milk
1 tsp pure vanilla extract
some blueberries to mix in with the batter
Mix together the almond flour, baking powder, sugar, and salt in a large mixing bowl. Set aside.
In a small mixing bowl, whisk the eggs, milk, and vanilla extract. Add the egg mixture into the dry ingredients and mix until everything is thoroughly combined. The texture will be a little different than traditional waffle batter. Add in the blueberries and mix well.
Heat up the waffle iron and rub with butter to keep the waffles from sticking. Once the iron is hot, pour about 1/3 cup of the batter into the center of the iron and close the lid until the waffle is thoroughly cooked. Makes 4-6 waffles depending on the size of your waffle iron. Serve with fresh berries and pure organic honey.
